I suspect the problem is a very low yield well - a well with a poor flow rate; but the problem could also be a damaged pump impeller.
Step through the diagnostics at WATER PRESSURE TABLE 2: PUMP RUNS, WEAK or NO WATER PRESSURE to figure what's wrong.

I have a newly drilled 200' well with a 130' down water table. It has a 2hp start rite deep well pump, my problem is that if I use 3 gallons of water the pump takes over 10 minutes to recover.
I have a water jet pump operating for 5 plus years - then the switch started "jumping" upon start up. replaced switch and cleaned 1/4" pressure hose. turned pump on and switch still "jumps" upon start-up
- only sometimes (about 50%) if the pump has been sitting a while or a large volume of water is required it seems to trip.
if a low volume of water is being used it will sometimes start normal or "jump" about 5 to 6 times and continue to run. its not the pressure tank or bladder - new switch (with safety cut off). any suggestions - thanks

TURN IT OFF immediately.
I can't know for sure what's wrong from so little information but when a pump makes a stuttering noise or shudders, or does anything else very unusual the problem could be coming from a variety of sources: a failing motor, no water in the well, electrical wiring or control problems.
By turning off the pump you might avoid worse damage to the pump or its controls and you will be safer by avoiding a possible fire.

from just your text when can I guess what's happening with your pump.
However it might help you to know that sometimes a Noisy water pump will get quiet when air has been purged from the pumping chamber. So if your pump is delivering water normally it may be fine.

If the pressure tank is waterlogged - the pump would cycle on and off rapidly when water is being used - then yes a torn or leaky bladder could be the culprit.
A problem with the pressure tank itself won't explain total loss of water pressure. But yes if the tank is water-logged then it's as if there were no pressure tank on the system and you'll only have water flow when the pump is running.

I have an issue when my filtration system purges nightly. My water pump starts out normally, and then starts quickly shutting off and on until it eventually overheats and shuts itself off. I know it will eventually burn out the motor, but seeing as this is the rainy season, I don't think the well is going dry.. Any ideas?

If you hear water filling the pipes but no water entering the water storage tank I suspect either a blockage at the tank entry or a pump that has a damaged impeller and is unable to lift water to the tank, or a well that's about out of water.

Our borehole fills a Jojo tank from where we use the water for irrigation.
When we use water the Jojo is not filling (waterlevel sensor in Jojo switches borehole on automatically). Borehole switches on and we can hear water filling the pipes to the Jojo, but nothing flowing into the Jojo.
Couldnt find a blockage in the pipes, green light on at borehole with no error messages. What can be the cause?

Advice for diagnosing diminished well water pressure:
There are several possible causes of poor water pressure that used to be good.
Just a few examples: The well flow rate could have diminished, or pipes could be clogged, or the pump impeller could be damaged.
Since I can't diagnose your particular well from just an e-text, I recommend reading

We live in the country and have our own well. Over the past few days we noticed we cannot get water inside the house if the hose is running outside. Same goes the other way. If I am doing wash, then you cannot get water outside. Any ideas of what may be causing this problem?

Your electrician or other trained repair person will check for
shorted electrical wires or control switch
seized pump motor
or pump impeller, drawing high current
Leave the system off as it may be unsafe.
