This page describes my favorite key lime pie recipe and the only one that Joanne Church ever asked me to repeat.

(No keys, just pie: lemons can replace limes)
Set out cream cheese, butter, sour cream to soften to room temp
Preheat oven to 350F
Mix until evenly damp with butter and moist brown sugar
Pat mix into 9” glass or ceramic pie plate, deeper is ok,up sides but not out onto rim. Or 11" pie plate (& increase sour cream to 3/4+ cup).
It's not necessary but I like to smear butter onto the pie pan surfaces before pouring the pie crust mix in.
Use a large tablespoon to mash the crust together and to form a more solid crust up the side in the pie pan.
Bake crust 10-13 minutes until getting brown
Remove crust and allow to cool thoroughly or set in garage or outdoors to cool more-quickly as needed
Remember to turn off the oven.
While the crust is baking and then cooling (outside in the snow or on a marble countertop) combine:
Mix together slowly in large mixer until completely as smooth as an otter’s pelt.
Pour that delicious filling into cooled crust and before serving, using a spatula to get all of the mix into the pie dish.
Optional: Lick the spatula.
Chill in frig for 2+ hours or freezer or in a snowbank for 1+ hours.
Cut pie into large generous servings, biggest for the chef, and serve for dessert or for breakfast.
